Winemaker’s Note: This is our second Foundation Merlot in 3 years and the combination of Olsen Brothers (4th Generation Farmers in Yakima Valley) and Ciel Du Chival (oldest Vineyard on Red Mountain) is a super winner. Silky smooth with depth. With a little time in your glass, look for roasted coffee beans.
On the nose: Cherry cordial says hello to dark chocolate covered cherries. Herbaceous with hints of mint.
On the palate: Dark chocolate covered cherries really come though. Also look for lush blackberry and tart raspberry. You can taste vanilla from the oak but it is not the star of the show.
Food pairing ideas: Caramelized roast veggies with a touch of sweetness. Oven-roasted chicken with all of the herbs and spices.
