Winemaker’s Note: Cabernet Sauvignon is actually a natural crossing of Cabernet Franc and Sauvignon Blanc that occurred during the 1600’s. Since then, it has evolved to become what it is today. DNA testing at UC Davis discovered this relationship in 1996. The world’s most popular red wine grape is a natural cross between Cabernet Franc and Sauvignon Blanc from Bordeaux,
France. Cabernet Sauvignon is loved for its high concentration and age-worthiness. Cabernet Sauvignon means “wild Cabernet” and the grape originated in the Aquitaine Department of France.
On the nose: A bouquet of raspberry sorbet, dark berries, cassis and cherry cola leap from the glass and lead to more subtle and complimentary hints of green peppercorn, sage, and menthol.
On the palate: The fruit, the whole fruit, and nothing but the fruit! Deep and layered flavors of ripe berries, black cherry and black currant blend perfectly with medium tannins and a long finish with ripe red fruit mouthwatering acidity. Sip and sip with showcase notes of cola, cedar, baking spices and earthiness.
Food pairing ideas: Why over complicate things? This wine is calling for a juicy greasy smash burger, a perfectly steak with all the fixings or a simple yet huge plate of cured meats and hard cheeses.
